L-Aspartic acid can be added into cool drinks as nutrition supplement. It is used in medicine as ammoniac detoxicating agent, hepar function accelerator or fatigue refresher. And it can also be used in biochemical reagent, medium and intermediate in organic synthesis. L -Aspartic acid is widely used in the food and pharmaceutical industries and is needed for the production of the low -calorific sweetener aspartame. It may be produced from fumaric acid by the use of the aspartate ammonia-lyase (aspartase) from Escherichia coli. L-aspartic acid can synthesis polymer of aspartic acid,which is widely used in detergent industry.

Proteins in the serum are critical to maintaining the pH balance in the body; it is largely the charged amino acids that are involved in the buffering properties of proteins. Aspartic acid is alanine with one of the beta hydrogens replaced by a carboxylic acid group. The pKa of the beta carboxyl group of aspartic acid in a polypeptide is about 4.0. Note that aspartic acid has an alpha-keto homolog, oxaloacetate, just as pyruvate is the alpha-keto homolog of alanine. Aspartic acid and oxaloacetate are interconvertable by a simple transamination reaction, just as alanine and pyruvate are interconvertible
